Triple Berry Baked Oatmeal

Our Triple Berry Baked Oatmeal is such a delightful, easy breakfast! Slightly sweetened, soft, and creamy, it’s perfect for a weekend brunch or as a make-ahead-meal that will last you throughout the week. We use at least 3 different berries (more if you want) and a mashed banana to pack in those colorful plant points. Our favorite way to serve it is hot out of the oven with a dollop of yogurt on top!

Ingrediens:

  • 3 cups old fashioned rolled oats

  • 2 cups milk of choice (oat, almond, coconut, etc)

  • 2 eggs

  • 2 tbsp butter or coconut oil, melted

  • 1/3 cup maple syrup

  • 1 mashed banana

  • 1 tsp baking powder

  • ½ tsp sea salt

  • 2 tsp cinnamon

  • 2 cups of mixed berries (fresh or frozen) - strawberries, blueberries, blackberries, raspberries

  • Optional - serve along with yogurt

Directions:

  1. Preheat oven to 375 degrees.  Grease a 9x13 inch baking dish.

  2. In a large bowl, mix together all of the ingredients.  Stir very well to make sure all ingredients are mixed thoroughly.

  3. Bake in the oven for 30 minutes or until oatmeal is set and the top begins to turn a golden color.  

  4. Serve warm or keep in the refrigerator for 4 to 5 days.
