Slow Cooker Beef Stew

This beef stew is my #1 favorite recipe to make in the slow cooker because it’s incredibly easy, comforting, and the meat turns out SO tender when it cooks all day in the crockpot. The meat and veggies sit in a hearty broth that creates an absolutely delicious flavor hat will leave you licking the bowl at the end of the meal. Enjoy!

Serves 4 to 6

Ingredients:

  • 2 pounds beef chuck roast, cut into 1 inch pieces

  • 1 onion, sliced

  • 6 carrots, chopped

  • 6 celery stalks, chopped

  • 1 pint of mushrooms, chopped

  • 2 teaspoons salt

  • 1/2 teaspoon pepper

  • Drizzle of honey (this plus the tomato juice helps the meat break down)

  • 1 cup tomato juice

Directions:

  1. Add all ingredients into your slow cooker. Cook on high for 6 hours or on low for 9 hours.

  2. Taste and adjust salt or pepper to your own liking. Serve warm with a salad or a slice of sourdough bread.
