Slow Cooker Healthier Hamburger Helper

Healthier Hamburger Helper - we took this classic childhood favorite and gave it our own healthier spin so you can swap out the boxed stuff! Creamy, hearty, and just plain GOOD!

Ingredients:

  • 1 pound ground beef

  • 2 cups frozen riced cauliflower

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 2 teaspoons salt

  • 1 tablespoon ketchup

  • 1 tablespoon Worcestershire sauce

  • 2 cups beef bone broth (regular broth is fine too)

  • 1.5 cups dried macaroni noodles or shells (we love the Jovial or Banza brands)

  • 1 cup cheddar cheese (we love using raw cheddar from the Organic Pastures or Organic Valley brands)

  • 1/2 cup non-fat Greek Yogurt**. Read directions below to see how to add yogurt without curdling

Directions:

  1. Heat a large skillet over medium-high heat. Add ground beef. Break apart beef with a wooden spoon or spatula and continue cooking until meat is mostly browned.

  2. Transfer meat to your crockpot. Add in frozen riced cauliflower, paprika, garlic powder, onion powder, salt, ketchup,Worcestershire sauce, and bone broth. Give a few good stirs to incorporate everything and then cover with a lid. Cook on high for 2 hours.

  3. 20 minutes before serving, add your uncooked noodles directly to the crockpot. Give a few stirs and then put the lid back on for 20 minutes or until pasta is cooked. Once noodles are done, add your cheese. The final step is to add your Greek yogurt. You first need to temper it to make sure it doesn’t curdle. Add 2 tablespoons of warm liquid from the crockpot to a bowl, whisk in the Greek yogurt, then add the mixture back into the crockpot. Add any more salt and pepper to your final product and serve immediately!
