Roasted Brussels Sprouts with Garlic and Bacon

If you haven’t yet figured out a go-to recipe for brussels sprouts, this simple dish is the answer. It results in delicious salty caramelized brussels sprouts that will make a believer out of anyone.

Ingredients:

1 pound brussels sprouts

3 strips of bacon, no sugar added

3 tablespoons olive oil or avocado oil

6 cloves of garlic, peeled

1/2 teaspoon salt

1/4 teaspoon black pepper

Directions:

  1. Preheat oven to 400 degrees.

  2. Cut off the bottom of each brussels sprout and then slice in half from top to bottom. Set aside.

  3. Heat a cast-iron skillet or an oven-safe skillet over medium high heat. Add bacon strips and cook on each side until brown and crispy. Once cooked, turn off heat, remove bacon and set aside. Carefully wipe off excess grease in the skillet with a paper towel.

  4. Add 3 tablespoons of oil to the same skillet. Add trimmed brussels sprouts, garlic, salt, and pepper. Toss to coat evenly.

  5. Transfer to oven and roast for 10 minutes. Shake pan or toss brussels sprouts with a spatula and then roast for 10 more minutes.

  6. Taste and add more salt or pepper to your liking. I like my brussels sprouts salty like french fries! Enjoy!
