Healthy Caramel Corn

Full disclosure: I’m usually a regular butter + salt popcorn gal, but with my recent discovery of date syrup and the ability to create a sweet and velvety caramel coating…well, let’s just say my plain Jane popcorn has continuously gotten an upgrade.

To achieve an authentic sticky caramel texture, I use a combo of date syrup, a little oil, vanilla and sea salt.

It’s sugary-sweet, subtly salty and totally addictive.

And the most shocking part? It's refined sugar FREE!! All thanks to the date syrup which is truly just made from dates.

If you are looking for a healthy alternative to classic caramel corn, look no further! This recipe will satisfy your taste buds in the most nutritious way possible.

Ingredients:

  • 6 cups popped popcorn

  • 1/3 cup date syrup

  • 1 tablespoon coconut oil

  • 1/2 tsp sea salt

  • 1 tablespoon vanilla extract

  • 1/4 tsp baking soda

Directions:

  1. In a small saucepan, add date syrup, oil, and sea salt. Bring to a quick boil and then turn off heat. Stir in vanilla and baking soda. Baking soda is optional but it helps the mixture foam up and coat the popcorn really well.

  2. Combine popcorn and caramel sauce in a large bowl. Mix with a spoon until popcorn is completely coated.

  3. Spread on parchment paper or a greased cookie sheet and let cool for 20 minutes before eating.
