Gluten-Free + Dairy-Free Pumpkin Spice Donuts

Ingredients:

  • 2 eggs

  • 1 cup almond flour

  • ½ cup pumpkin puree

  • 3 tbsp date syrup

  • 1 tsp baking powder

  • ½ cup or 2 servings Juice Plus vanilla protein powder

  • 1 teaspoon cinnamon

  • ½ teaspoon pumpkin pie spice

Optional “frosting”:

  • ¼ cup or 1 serving Juice Plus vanilla protein powder

  • Splash of non-dairy milk

  • ¼ tsp pumpkin pie spice

Directions:

  1. Preheat oven to 350 degrees.

  2. In a bowl, whisk together your eggs. Add in the rest of your doughnut ingredients and stir to combine.

  3. Spray a donut pan with avocado spray or grease with coconut oil. Add the batter to the donut pan, filling up about ¾ to all of the way.

  4. Bake for 15 to 20 minutes or until doughnuts are set.

  5. Meanwhile, make your optional frosting. Mix together protein powder, splash of milk, and pumpkin pie spice. Stir and add milk until thick and creamy. Allow doughnuts to cool before icing. Eat while fresh or store in the fridge so the icing hardens a bit.
