Strawberry Kiwi Smoothie

We recently purchased a bag of kiwis and were chowing down on a couple as a mid-morning snack.  My daughter started taking her sliced kiwi and strawberries and dunking them in her water because, well, that's toddler life. 

"Ooh mom it tastes like fruity ice cream - let's make a shake."  

Shake = smoothie for a toddler.

DING DING DING!  Invitation for this mom to make a new recipe and secretly feed my kid hidden greens.  Score!

The key to this smoothie is to use coconut water, like my daughter suggested, which I thought was brilliant.  Almond milk is usually my go to liquid, but something about coconut water makes this extra hydrating and light which feels so refreshing on a hot day.  

Not a fan of coconuts?  Regular filtered water would be great too with a squeeze of lemon to bring in an extra flavor. Enjoy!

Strawberry Kiwi Smoothie

serves 1

Ingredients:

  • 1 kiwi, peeled

  • 1/2 banana, peeled

  • 1 cup strawberries

  • 1 large handful spinach

  • 1 scoop vanilla protein powder

  • 1 tbsp chia seeds

  • 1.5 cups coconut water

  • 3-4 ice cubes

Instructions:

1.  Add all ingredients to a blender.  Blend on high for about 30 seconds or until pureed and smooth.
