Spiced Carrot Soup with Lime

Whether you love carrots or you think they’re for rabbits, you’re going to love this soup.

It’s the perfect blend of creamy, savory and sweet.

The peanuts, lime and cilantro are all great ways to bring a little extra to this soup. It also gives your kids and other pickier eaters a little way to make it their own and be involved in the process.

Blending up veggies into a soup is also a great way to get lots of nutrient dense foods into a meal.

Spiced Carrot Soup with Lime

Serves 4 large portions

Ingredients:

  • 1 tbsp olive oil

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 8 large carrots, peeled and chopped

  • 1 (14 oz) can full-fat coconut milk

  • 1.5 cups veggie broth

  • 1 tbsp red curry paste

    1/4 cup peanut butter or almond butter

  • salt + pepper to taste

  • 2 limes, cut in half

  • 1/2 cup cilantro

  • 1/2 cup almonds, roughly chopped

Instructions:

  1. In a large pot or dutch oven, heat oil over medium-high heat. Add onions and garlic and saute until onion is translucent.

  2. Add the carrots, coconut milk, broth, and curry paste. Continue cooking until carrots are fork tender. Add peanut butter at the end and stir until melted.

  3. Very carefully, blend the soup in a blender or with an immersion blender. Season generously with salt + pepper.

  4. Divide soup between 4 bowls. Top each with the juice of 1/2 lime. Divide cilantro and chopped almonds between bowls as well. Serve hot.

    *TIP* Portion soup into single serving containers and eat as your lunch or dinner all week long!
