No-Bake Thin Mint Cookies

We grew up eating girl scout cookies by the sleeve, especially thin mints, and are still tempted to buy them year after year when girl scout cookie season strikes.

The long ingredient list on the back of these boxes, the mega dose of refined sugars, PLUS a family gluten intolerance left us with serious thin mint FOMO.

That right there was the inspiration for this deliciously simple way to make your own healthier and gluten free no bake thin mint cookies. 

These are free of refined sugars, require zero baking and are loaded with protein. Plus they're addictingly delicious without any of the guilt! 

How awesome is that!?!

They make a great dessert, but are also perfect for snacking throughout the day when our sweet tooth strikes.

No-Bake Thin Mint Cookies

makes 12 

Ingredients:

  • 1 cup oats

  • 1 cup pitted dates (10-12 depending on size)

  • 2 tbsp hemp seeds

  • 1/2 cup (2 scoops) Plant Based Chocolate Complete Protein

  • 1 tbsp dark cocoa baking powder

  • 2 tbsp coconut oil, melted

  • 4 tbsp water

  • 1/4 tsp peppermint extract

  • pinch of sea salt

Instructions:

  1. Blend all ingredients in a blender or food processor. If using a blender, add the water and dates first, blend well and then add all other ingredients. 

  2. Refrigerate for at least 30 minutes.

  3. Roll into golf ball sized balls and lightly press down. 

  4. Store in an airtight container for up to 5 days.
