Funfetti Protein Balls

These homemade funfetti protein balls taste like your favorite boxed cake but made with real wholesome ingredients. My 2 secret ingredients that bring so much of the flavor are cashew butter and almond extract. The cashew butter makes these creamy and delicious without an overpowering nut butter taste and the almond extract gives these protein balls that fun nostalgic flavor I except from a funfetti cake. Whip these up and bring to a summer BBQ for a healthier dessert or share this dish at a potluck and watch everyone’s eyes light up with delight.

Ingredients:

  • 3/4 cup cashew butter (can sub another nut butter but cashew is the BEST flavor for this recipe)

  • 1/2 cup vanilla protein powder

  • 1/3 cup oat flour (I just grind rolled oats in my food processor or blender)

  • 2 tablespoons honey

  • 1/2 teaspoon vanilla extract

  • 1/2 teaspoon almond extract

  • Pinch of sea salt

  • 2 tablespoons milk of choice

  • 3 tablespoons rainbow sprinkles (we love the Thrive Market brand since it doesn’t contain dyes)

Directions:

  1. Add all the ingredients except rainbow sprinkles to a bowl. Mix well with a rubber spatula. Batter may seem a bit dry at first, but keep mixing. If batter is way too dry, then add another tablespoon or two of milk. Be careful though, you do not want the batter to be wet otherwise it will be too hard to roll into balls.

  2. In a separate small bowl, add your rainbow sprinkles. Scoop out tablespoon-sized balls and form in your hands. Then, roll each ball in the rainbow sprinkles. Keep in the refrigerate until ready to serve.
