Air Fryer Chicken Parmesan

Chicken Parmesan may seem fussy to prepare, but it’s actually easier than you would imagine. Using the air fryer is a huge part of the ease factor because you don’t have to stand over hot sizzling oil to fry these chicken breasts. It also is a healthier version because it’s not bombarded in frying oil. Pair it with some pasta and a roasted veggie and you are sure to get a “wow” response from your family.

Ingredients:

  • 2 chicken breasts, each sliced horizontally to create 4 pieces total

  • 1/2 cup gluten-free flour

  • 2 eggs

  • 1/2 cup gluten-free bread crumbs

  • 1 teaspoon oregano

  • 1 teaspoon garlic powder

  • salt

  • pepper

  • 1 cup marinara sauce

  • 1 cup shredded mozzarella or parmesan (regular or vegan - whatever you can tolerate)

Directions:

  1. Make sure you have cut your chicken breasts in half horizontally to create 4 chicken cutlets total. Sprinkle each chicken cutlet generously with salt and pepper.

  2. Prepare breading station: In 1 bowl, place gluten-free flour. In 2nd bowl, crack your 2 eggs and whisk with a fork. In 3rd bowl, place your bread crumbs, oregano, garlic powder, 1 teaspoon of salt and 1/2 teaspoon of pepper.

  3. Working one at a time, dip each chicken piece into the flour first, then into the eggs, and then finally coat with the bread crumbs.

  4. Preheat air fryer to 400. Preheating an air fryer only takes 1 to 2 minutes. Working in batches if necessary, place chicken in air fryer and cook for 5 minutes on each side. Then, remove and top each piece with 1/4 cup of marinara and 1/4 cup of cheese. Return to the air fryer and cook for 3 more minutes.

  5. Serve alongside a salad, pasta, or a roasted veggie and enjoy.
