Greek Chicken Bowls

Ingredients:

  • 1.5 pounds chicken breast

  • 2 tablespoons olive oil

  • Greek seasoning or 1/2 teaspoon of each: basil, oregano, thyme, garlic powder

  • Cooked rice

  • Cucumbers

  • Tomatoes

  • Other optional toppings: Olives, feta, pickled onions

  • Dressing of choice: Lemon vinegar, fresh lemon juice, tzatziki, etc

Directions:

  1. My favorite way to start this dish is to brine the chicken breasts in 4 cups of water plus 1/4 cup sea salt for 20 minutes ahead of time. This helps the chicken breast turn out moist and delicious! Skip this step if you are short on time.

  2. Preheat oven to 450 degrees. Spread 2 tablespoons olive oil over chicken breasts and season generously with salt, pepper, and a Greek seasoning blend. Bake in the oven for 12 minutes, flip, and then another 12 minutes or until the chicken reaches an internal temperature of 165 degrees.

  3. Meanwhile, assemble the rest of your toppings by slicing cucumbers and tomatoes and gathering anything else you’d like to use like feta, olives, etc.

  4. Once the chicken is done, slice, and then distribute between bowls. Add cooked rice, cucumbers, tomatoes, other toppings, and dressing of choice. My favorite dressing is a barrel-aged lemon vinegar - so good!!!
