Ultimate Breakfast Tacos

Sometimes you just need a heartier breakfast and on those days our ultimate breakfast tacos are our go-to breakfast (or even our breakfast for dinner).

This is a crowd pleaser, even with picky eaters since they are super customizable. 

All you need for some serious breakfast yumminess are eggs, a can of black beans, whatever veggies you have in the house and your families favorite taco toppings.

Voila delicious, quick and super nutritious breakfast!

This breakfast is loaded with protein and fiber and will keep you full until lunch.

When we buy eggs, we look for organic pasture raised, since these eggs come from chickens who get to act like chickens. They are free to roam around and are never given icky antibiotics or hormones. These eggs seriously look different when you crack them open and see their rich yellowy orange color and major bonus- they taste better too!

Ultimate Breakfast Tacos

Serves 2-3

Ingredients: 

Base:

  • 6 organic pasture raised eggs
  • ½ can of black beans
  • ½ sweet onion
  • 2 cloves garlic
  • 4 corn tortillas
  • Oil for pan (avocado oil, coconut oil or ghee work great)

Optional veggies (you choose how many to add- we add them all if we have them!)

  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 6 button mushrooms, diced
  • 2 Handfuls of baby spinach or baby kale

Optional toppings:

  • 2 green onions, sliced
  • 1 avocado, sliced
  • salsa and hot sauce to taste

Instructions:

  1. Heat oil in pan, when hot add onions and garlic. Saute for about 3 minutes, onions should start to become clearer.

  2. Add in optional veggies- thicker more dense veggies like zucchini and bell peppers should go first, add leafy greens last. Saute for another 3-5 minutes for veggie to become softer.

  3. Scramble eggs in a bowl and then add them to your veggie mixture. Stir CONSTANTLY, burnt eggs are no bueno.

  4. Stir in black beans after eggs are done to your liking.

  5. Place egg and veggie mixture on your tortillas, top with your favorite toppings and enjoy!
